does it come with a white roof when ordering the Denim option...I can't find where it can be chosen for the Ultimate and I even asked a dealer and they couldn't find it either so I'm thinking maybe it's been dropped for the 2022 model.

Unfortunately, no white roof on the Ultimate in 2021 or 2022. I expect it's because of the included sunroof on the Ultimate.
and if robots are doing the painting I'd think there would still have to be some masking off parts...I still think mine is still several weeks yet.
